RECIPE: Cheese Spaghetti

6-8 thick slices -center cut bacon, cut into 1/2" pieces and fried til almost crisp in a large sauce pan or dutch oven.  Add 2 medium onions, diced, add lots of black pepper.  Add 8 oz.. sliced mushrooms; crushed garlic  ( 3-4 cloves). Cook til onions and mushrooms are soft. 

Add 1-28 oz. and  1-14 oz. cut or whole tomatoes , cut into small chunks.  Simmer about 1 hour and add 1/4 cup catsup  . Add more pepper. , Italian seasoning , if wanted and add a little water if needed.

 

### ADD IN IF DESIRED:  Frozen Italian style mini meatballs. drop in sauce or fry in skillet for crisp.

 

Cook 1/2 lb. spaghetti, broken in half, til almost done. Drain, Rinse in colander. Add spaghetti to sauce. Stir well. Simmer about 1/2 hour and add water/catsup if necessary .

 

When ready to eat, Stir in 8oz. shredded sharp cheddar . Serve when cheese has melted and mixed well.

 

Should be very peppery. Add more according to taste. Sprinkle with Parm cheese, parsley
